Introduction

Rich smooth pea soup, served hot or chilled. Rich smooth pea soup, served hot or chilled.

Ingredients

    1 15 oz. can Del Monte salt free sweet peas
    1 1/2 cup almond breese Milk, divided
    2 tsp all-purpose flour
    2 tbsp extra virgin olive oil
    1/4 tsp salt (optional)
    1/2 tsp nutmeg
    1 medium onion, chopped

Directions

Combine, undrained peas, olive oil, HALF the almond milk, flour, salt, nutmeg in blender. Blend on high for 3 minutes or until smooth.

Pour into medium sauce pan and heat on very low.

Put onion and remaining almond milk in blender without cleaning out blender. Blend on high until onion minced.
Stir into sauce pan. Heat, stirring ocassionally for about 30 minutes or longer until warm and ready to serve.

Season to taste.

Makes 4 1-cup servings.
