Number of Servings: 8

Ingredients

    Use whatever greens you like – mesculin mix, Greenleaf lettuce or spinach
    11 oz. Can mandarin oranges, drained
    1 small purple onion, cut-up small
    ¼ cup slivered almonds, toasted (I always add extra)

    Dressing (I usually double the recipe for larger salads):
    ¼ cup sugar
    ¼ cup white vinegar
    ¼ tsp salt
    ¼ tsp dry mustard
    ¼ tsp minced onion
    Dash paprika
    1 egg, slightly beaten
    ¼ cup canola oil

Directions

Wash & pat lettuce. Mix lettuce and onion together in salad bowl. Season with fresh ground pepper & coarse salt. Toss. Place in refrigerator until ready to serve. Add the oranges & almonds before serving. Top with homemade dressing.
Dressing:
Combine first seven ingredients in small saucepan. Bring to a boil and boil for one minute. Gradually stir in oil. Chill.
