Introduction
Dairy free! After years of tweaking, I've finally managed to find the right ratio of flour/butter/chocolate chips, making the best balance between crispy, crunchy and chewy and chocolate. Yummy.I use vanilla bean paste instead of extract, in my mind, it's what makes these cookies perfect...extract will suite fine though. Dairy free! Ingredients

1 c. earth balance buttery spread (I use the sticks)
1 c. granulated sugar
1 c. brown sugar
2 eggs
1 tbsp. vanilla bean paste or vanilla extract
2 3/4 c. flour
1 tsp. baking soda
1 tsp. salt
2 c. chocolate chips (I only use Guittard bittersweet, they are dairy free and hands down the best out there)
Directions
Preheat oven to 350.
Cream butter and sugar, slowly add both eggs, mix until fluffy and light, add vanilla bean paste or extract. Gently mix in flour, soda, 1 tsp salt and beat until combined, then add chocolate chips.
Drop on parchment-lined baking sheet by about 1 tbsp. bake for 10-13 minutes, depending on how soft or crunchy you prefer your cookies (10 or 11 for soft, 13 for crunchy).
