I chose to substitute nonfat milk, in place of regular 2% or Vitamin D milk. I also chose to use I Can't Believe it's Not Butter, instead of pure butter or margarine. Other substitutes may include... wheat flower, less sugar, no salt, and an egg substitute. Suggestions welcome!

Number of Servings: 12

Ingredients

    3/4 c milk (nonfat)
    1/3 c margarine (I can't believe it's not butter)
    1 egg
    2 c flour
    2/3 c sugar
    2 tsp baking powder
    1/2 tsp salt
    1 c chopped strawberries
    1/2 c chopped macadamia nuts

Directions

Pre-heat oven 400 degrees. Mix all ingredients together except strawberries and macadamia nuts. Once the batter is well blended, fold in strawberries and nuts. Distribute amongst 12 paper-lined muffin cups and bake 20-22 minutes until golden brown.
