Introduction

These good-for-you muffins are a great treat for breakfast or for a mid-day snack! These good-for-you muffins are a great treat for breakfast or for a mid-day snack!
Number of Servings: 18

Ingredients

    1 cup Mashed Bananas
    1 whole Egg
    ½ cups Water
    ½ cups Sugar Free Apple Sauce
    2 cups Whole Wheat Flour
    1 teaspoon Baking Soda
    2-¼ teaspoons Baking Powder
    1 cup Fresh Or Frozen Blueberries
    1/4 cup sugar or substitute of your choice

Directions

Preheat an oven to 350 degrees F (175 degrees C). Grease 18 muffin cups, or line with paper muffin liners.
Mix together mashed bananas, egg, water, and applesauce in a large bowl. Mix in flour, baking soda, and baking powder until mostly smooth (you will still see lumps from the banana, but that’s okay!). Gently fold the blueberries into the batter.
Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 15 minutes. Remove muffins from tins, and cool on a wire rack.

Based upon the review I have also decided it would be better with 1/4c sugar so I'm adding it to this so it calculates the nutrition info right!

    Tried this recipe tonight for breakfast tomorrow. I added 1/4 flax seed, 1/4 cup of water and 1/2 cup of walnut pieces. They were moist and tasted good but could have used maybe a 1/4 cup of Splenda to sweeten it up a bit. Thanks! - 6/13/10
