Number of Servings: 9

Ingredients

    8 oz white crab meat, fresh or canned, drained
    1 egg, lightly beaten
    1 1/2 cup rice blend, cooked & cooled
    4 scallions, white part chopped
    1 Tbl toasted sesame oil (divided 1 tsp + 2 tsp)
    2 garlic cloves, minced
    3 Tbl chives, snipped
    1 cup Panko bread crumbs

Directions

Preheat oven to 400 degrees.

Combine crab, egg, rice, scallions & 1 tsp sesame oil in a bowl.

In a small skillet, heat the remaining 2 tsp sesame oil. Add garlic & asparagus and stir-fry for about 2 minutes, then add to the crab mixture.

In separate bowl or plate mix the chives and Panko. Scoop 1/4 cup of the crab mixture, form into ball and roll in Panko.

Place on baking sheet and bake for 40 minutes.

Makes 9 rice balls.
