Introduction

Ingredients

    1 small bunch of fresh thyme
    juice of 1-2 limes
    garlic, 1 Tbsp minced or 4 cloves smashed
    1 Jalapeno pepper
    1/3 cup Olive Oil
    2 tablespoons honey
    kosher salt
    1 package of Just Bare chicken thighs (skin removed and bones removed)

Directions

In a bowl add the following:

Leaves removed from thyme spring
juice from 2 limes
1 jalapeno diced including seeds
garlic either already diced (1 Tbsp) or 4 cloves smashed with a knife
1/3 C olive oil
2 tablespoons honey
1 tsp Kosher salt

Mix together and add more olive oil if you do not think it will cover your chicken.

Remove Just Bare chicken from container and put into a baking dish (pie plate works great) and pour the sauce over the chicken and marinate 30 minutes to 1 hour at ROOM temperature. Cover chicken while marinating.

Preheat oven to 425 degrees F.

Roast chicken for 45 minutes and/or the thighs register 160 degrees F.

Transfer chicken to a platter and top with the jalapenos. Remove the thyme leaves (if large) and pour broth into a bowl and serve on the side.

Prepare to be WOW.
