Introduction
If you are a vegan looking for the real deal, this is for you! This recipe makes 30 LARGE cookies or 60 small (in which case you can get 2 for the serving size)I came up with these while experimenting. I hope you enjoy as much I have!
I use Kroger chocolate chips because they are non-dairy and CHEAP! You can get them at Fred Meyers.

Ingredients

1/2 c. Canola oil
1/2 c. Shortening (all vegetable- I use Crisco)
1/4 c. Brown sugar
1 1/4 c. White sugar
3 tsp. Ener-G Egg Replacer
4 TB. Water
1 tsp. Salt
1 tsp. Baking soda
2 tsp. Vanilla extract
2 1/4 c. Flour
1 c. Non-dairy Semisweet Chocolate Chips
Directions
Preheat oven to 350
1) Cream the shortening, oil, and sugars together.
2) In a small bowl, prepare the egg replacer for 2 eggs. Mix well and add to the sugars and oil/shortening mix
3) Add salt, baking soda, and vanilla. Combine very well.
4) Add flour a small bit at a time. Mix until its a dough consistency. You can eat this dough but I think the cookies are a lot better (and I'm a cookie dough person)
5) Add the chocolate chips!
6) Put in golf-ball sized balls on the cookie sheet and flatten slightly. These cookies WILL spread like normal cookies.
7) Cook for between 8-15 minutes (every oven is different) until edges are done and middle looks just barely done. Take them out and enjoy!!!
