Introduction

Ingredients

    1 large green zucchini (courgette)
    1 large ripe tomato, diced
    1 clove garlic, minced
    1 tsp olive oil
    Salt & Pepper
    Pinch cayenne (optional)

Directions

Makes 2 good sized veggie portions. Use a potato peeler to cut strips of zucchini (I leave the peel on for more colour). In a large saucepan (with lid), heat oil and add garlic. Then add zucchini and tomato. Stir and cook, covered for about 5 minutes. Season to taste.

    Incredible!
    I had no salt canned tomatoes on hand so I chopped a few of them up and added to the pan instead of fresh. Added some garlic and herb feta before serving! Hubby LOVED it and he doesnt like zucchini! - 2/22/11
