Introduction

My nutritional tracker follows folate. It seems like I'm always coming up short. So, I substituted soy flour for part of the regular flour and significantly increased the folate count for this recipe. My nutritional tracker follows folate. Ingredients

    1 1/2 cups all-purpose flour
    1/2 cup soy flour
    1/4 cup sugar
    4 tsp. baking powder
    1 tsp. salt
    1/2 tsp. cinnamon
    3 eggs
    1/2 cup mashed butternut squash
    1 1/2 cup non-fat milk
    2 tbsp. margarine, melted

Directions

Stir together the first six ingredients. Add wet ingredients and stir until blended. Bake on pre-heated waffle maker. 1/4 cup of batter equals one serving. Makes 16 servings.
