Introduction

I've adapted this from other sweet potato hash recipes so that it has more flavor and it's quicker to cook. It's the perfect one-dish brunch! I've adapted this from other sweet potato hash recipes so that it has more flavor and it's quicker to cook. It's the perfect one-dish brunch!

Ingredients

    1 large sweet potato, peeled and cubed (1.5 cups) **
    1 small red bell pepper, cubed
    1/2 cup chopped red onion
    4 Vegetarian Sausage Patties (I use Morningstar Farms), cut into small wedges
    1 1/2 tablespoon Maple Syrup
    2 tbsp. water (plus more for steaming the potato)
    1 tsp. chili powder
    1 tsp cinnamon
    1/4 tsp salt


    ** Cubed butternut squash can be used instead, saving about 50 calories per serving while adding 2 more grams of fiber!**

Directions

Put the sweet potatoes in a microwave-safe dish, add a splash of water, and cover with plastic wrap. Microwave on high for 5-6 minutes, or until soft.

Cube the other veggies and sausage patties while the potatoes microwave.

In a large skillet spritzed with non-stick spray, saute the pepper and onion over medium-high heat for 3 minutes. Add the sausage, chili powder, and cinnamon, and cook another 5 minutes.

When the potatoes are done in the microwave, drain them, then add to the skillet. Turn the heat to high, and add the water and maple syrup. Cover, and cook for 2 minutes. Remove the lid, and cook for 2-3 more minutes, or until the syrup is absorbed and the potatoes have browned.

~~~Serve piping hot to two very hungry people, or serve to 3 very hungry people who also have a side of eggs. If divided into thirds, this recipe has 220 calories and 4.5 grams of fat per serving.~~~

    I found this recipe when I search for gluten free vegetarian brunch ideas. One warning - Morning Star and Gimme Lean "sausage" contain wheat gluten, so for those of you who are gluten sensitive, you'll need to find something else, like Dr. Prager's. - 5/10/12
