Ingredients

    1 1/2 cups canned black beans, rinsed and drained
    3/4 of one avocado, cubed
    1 small (4") cucumber, chopped
    1/2 cup chopped red onion
    1/2 large tomato, chopped
    1/3 cup chopped red pepper
    1 tbsp. oil and vinegar dressing
    1 tsp. chili powder
    1/2 tsp. hot sauce
    Juice of 1/2 of one lime

Directions

Combine all vegetables together in a large bowl, folding carefully so that the avocado doesn't bruise.

Stir in the lime juice, chili powder, dressing, and hot sauce. Serve at or below room temperature!

Makes 4, 3/4-cup servings.

    Incredible!
    Very fresh salad! It makes a pretty good "salsa" with chips too. I added some garlic powder to mine for just a little more flavor. - 9/14/10

    Very Good
    This came out pretty good- specially if you let it sit for a while. I didn't have cucumber but I'm sure it would have been tasty- I also didn't know what kind of vinegar was recommended so I didn't use any- I just added lemon juice :) I would make this again for sure. - 7/29/10
