Ingredients

    2 tbsp. olive oil
    1 clove of minced garlic
    1/4 cup orange juice
    2 tbsp. lemon juice
    1 cup of fresh basil (or 2 tbsp. dried basil)
    1/4 cup parmesan cheese
    1/2 tsp. Dijon mustard
    4 salmon steaks or an Atlantic salmon side (about 1 lb.)
    dash of cayenne pepper

Directions

Heat oven to 400 degrees F.
Put all ingredients except fish and cayenne pepper in blender.
Blend until herbs are fine.
Put 1/4 of sauce in bottom of baking dish that is slightly larger than the fish.
Pour rest of sauce over fish.
Bake until done (about 140 degrees F internal temp in thickest part) about 30 minutes.

    Incredible!
    Delicious sauce that went well with rice and green beans. I baked the fish in a dish that was just slightly larger than the fish and the sauce almost covered it. I wouldn't call it "broiled;" it was more like baked or poached. Turned out great nonetheless. I'll definitely make it again! - 10/8/12
