Introduction

Ingredients

    2 med sized red tomatoes, diced
    2 small zucchini (baby marrow), sliced
    4 med white button mushrooms, sliced
    30 green beans (approx), sliced into longish lenghts
    1 med green apple, diced
    2 cups (approx) cabbage, finely sliced
    1 tsp thyme
    1/2 cup fresh lemon juice

Directions

Toss eveything together and enjoy on it's own or with a protein portion.

The trick is to chop the ingredients into fairly large chunks to encourage chewing. I usually grab whatever fresh fruit and veg I have in the fridge and make it up as I go along.
