Ingredients

    2 tsp Olive Oil
    1 cup Zucchini, sliced
    1 Cup broccoli, chopped
    1 cup cauliflower, chopped
    1/2 yellow onion
    1 red pepper, chopped
    1 pkg (8oz) sliced fresh mushrooms
    4 cloves garlic
    1 can diced tomatoes w/ basil and garlic
    4 oz Barilla Plus penne

Directions

Saute veggies in olive oil. Once cooked to taste, add can of diced tomatoes. Meanwhile, cook and drain pasta according to directions. Toss pasta w/ veggies.

May add 1/2 cup of 1% cottage cheese for extra protein for 44 extra calories. Also may top w/ one ounce of parmesan for 111 calories.
