Ingredients

11/2 lbs of chicken breast cut into pieces
3/4 tsp salt
1/4 tsp ground black pepper
2tsp vegetable oil
1 link hot turkey Italian sausage
1 cup chopped onion
1/2 cup chopped red pepper
11/2 cups of uncooked Arborio rice
1 diced plum tomato
1 tsp sweet paprika
1/4 tsp saffron
1 minced garlic clove
3 cups fat free low sodium chicken broth
3/4 lb of deveined shrimp
1 cup cut asparagus
1/2 cup of frozen peas/thawed
Directions
Preheat oven to 400 degrees
sprinkle chicken with 1/2tsp saltand black pepper. Heat oil in large skillet over med heat. Add chicken: cook 3 min per side. remove from pan and keep warm.
Remove casings from sausage. add sausage to pan, cook 1 min.Add onion and bell pepper, cook 7 min. stirring constantly. Add rice tomato,paprika,saffron,and garlic; cook 1 min, stirring constantly. Return chicken to pan. Add broth and 1/4 tsp salt; bring to boil. wrap handle with foil; cover pan. Bake at 400 degrees for 10 min. Stir in shrimp,asparagus,and peas. Cover and bake an additional 5 min or until shrimp are done.
