Number of Servings: 12

Ingredients

    2 c sifted flour
    1/2 tsp salt
    1/4 tsp sugar
    1/2 c. butter chilled (plus up to 3 T shortening)
    5 T cold water (less)
    6-8 eggs (depending on size of eggs and pie plates)
    4 c milk and cream (or evap. milk, e.g., 2 c light cream, 2 c whole milk)
    1 tsp. salt
    dash pepper
    dash nutmeg (I freshly grate some into the filling)
    2 c grated Swiss cheese

Directions

Mix as for pie crust, cutting butter into four, salt and sugar, then adding cold water as needed. Roll out and fit into 2 9" pie pans. Prick with fork. Bake at 400 for 10 minutes.

Beat eggs with other ingredients and then add cheese. Pour into pastry shells. Bake at 375 for 45-50 minutes. Cool 5 minutes before serving. Can add onion, bacon, ham, but I rarely do. Good warm or cold.
