Introduction

Number of Servings: 10

Ingredients

    1 package (375 grams) Turkey sausage
    1/2 c Extra virgin olive oil
    25g Bag fresh basil
    1/2 c Fresh parsley
    1/4 c garlic
    1 c Fresh spinach
    32g Light Parmesan cheese
    8c Whole wheat pasta
    Red Pepper flakes to taste (1 tsp works for me)

Directions

Remove sausage from casings. Break up into small pieces and fry in non-stick pan until no longer pink. Add olive oil, garlic, chopped herbs and spinach and red pepper flakes. Pan fry for 3 to 5 minutes. Add parmesan cheese. Toss with cooked pasta until well coated.

Yields 10 - 1 cup servings

    Incredible!
    This was great for kids. I may add more spinach next time to get more vegetables in my kids. I served the red pepper separately and let the kids add it themselves. My husband had to avoid tomatoes for a few days and he doesn't like cream sauce. This pasta was flavorful without being heavy. - 3/15/12

    Incredible!
    This is to die for! My family loved it...including the spinach...and gobbled it up. I didn't have fresh basil so I used some dried Italian seasonings, sprinkled some olive oil on the pasta before I tossed it with the sausage mixture and omitted the parm. I will be making this again.     Very Good
    I made my own turkey italian sausage to use in this. i left out the red pepper because my husband can't do spicy foods. added a bit of salt at the end. turned out great! - 10/24/10

    WOW! I loved this not only did it smell great it tasted fantastic. I loved the pepper flakes it gave it a spice. I even added a little bit of mozzerella cheese with it and I love it. I love this recipe. I can't wait to make it again. - 7/18/10
