    1 Cup Canola Oil
    3 Eggs
    2 Cups Sugar
    3 Tsp Vanilla Extract
    2 Finely Shredded Zucchini (Do not peel, just wash and cut ends off)
    1 Tsp Baking Powder ( use with allpurpose flour only)
    1 Tsp Salt (use with allpurpose flour only)
    1 Tsp Soda (use with allpurpose flour only)
    3 Tsp Cinnamon
    3 Cups Flour
    1/2 Cups Chopped walnuts or raisins (optional and not included in calories)
    Bake at 350 degrees F for 1 hour. Bake in 13 x 9 x 2 Cake Pan.
