Introduction

Ingredients

1 c. reduced fat ricotta cheese
1/2 tsp. dried oregano
1/4 tsp. salt
1/4 tsp. ground black pepper
4 boneless, skinless chicken breast halves
1/2 tsp. garlic powder
2 Tbsp. Extra Virgin Olive oIl
1 c. crushed tomatoes
4 slices reduced fat Mozzarella cheese
Directions
In mixing bowl, combine ricotta with oregan, salt and pepper. Set aside.
Slice mushrooms, set aside.
Rub chicken with garlic powder, heat oil in a large skillet over medium high heat. Add chicken and brown on both sides, taking care not to cook too long.
Remove chicken from pan to a platter, add mushrooms, stir to blend with chicken bits in pan, adding chicken broth if needed to keep moist, scant amount.
When mushrooms are cooked, transfer to baking dish, place chicken on top of mushrooms. Top each half of breast with 1/4 c. of the ricotta cheese mixture, and 1/4 c. of tomatoes. ( I also have used a good marinara sauce). Top each piece of chicken with a slice of mozzarella cheese, bake for 20 minutes, testing with thermometer to read 170 degrees.
Note: I have pounded the chicken down to shorten cooking time, and the dish is ready much quicker.
