Introduction

A wonderful way to make a stove top dinner using end of summer garden produce! A wonderful way to make a stove top dinner using end of summer garden produce!
Number of Servings: 8

Ingredients

    1 lb. ground beef
    1 cup chopped onion
    1 cup chopped pepper
    1 1/2 t. salt
    1/4 t. pepper
    1 t. chili powder
    5 cups sliced zucchini (or summer squash, or a mixture)
    2 lg. tomatoes, chopped
    1 1/2 fresh whole kernel corn (about 3 ears)
    2 T. chopped pimento
    1/4 cup chopped fresh parsley

Directions

Saute beef, onion and green peppers in 12 in. skillet until well browned. Add remaining ingredients. Cover and simmer 10-15 minutes or until vegetables are tender. (May serve over rice if you choose to.)
