Ingredients

    2 T canola oil
    1/3 C honey
    1/3 C soy sauce
    1/3 C water
    2 garlic cloves, finely chopped
    1 tsp black pepper
    2 lbs skinless, boneless chicken breasts, cut into 1" cubes
    2 lemons, cut into wedges, then halved
    2 red onions, cut into wedges, then halved
    2 bell peppers, cut into 2" pieces

Directions

In a large bowl, combine oil, honey, soy sauce, water, garlic and pepper. Whisk to blend.
Add chicken, lemons, onions, and peppers and marinate 2 hours at room temperature or refrigerate overnight, turning occasionally.
Drain chicken and vegetables. Divide chicken and vegetables among 6-12 skewers.
Grill over a charcoal fire of medium heat for 12-15 minutes, until chicken is tender. (Or, place kebabs on a foil-lined broiler pan. Broil, turning occasionally, for 12 minutes until edges of chicken are brown).
