Ingredients

1 cup long grain white rice
1 chicken breast, boneless and skinless
1 package frozen broccoli florets (or fresh)
1 cup raw onions, sliced on diagonal
1 cup celery, sliced on diagonal
1 tbsp olive oil
few drops of sesame oil
ginger root, finely minced or slivered
vinegar to taste
soy sauce to taste
optional - hot pepper flakes
Directions
Cook white rice according to package instructions.
Slice chicken breat into thin bite sized slivers.
Heat olive oil in large skillet. Quickly saute chicken in hot oil til completely cooked. Add broccoli and cover to cook through, Add onions, ginger root and celery and cook. Vegetables should still be crunchy. Season with sesame oil after cooking is completed. Add vinegar, soy sauce and pepper to taste. Serve over rice.
