Ingredients

Chicken tenderloins - we use frozen and generally 12-15 ounces will feed 3-4 people easily
diced onion - about two slices
Green Giant "canned" mushrooms (they are in a jar) - up to half a jar
3/4 C of cut leaf frozen spinach
2 tsp Brown Sugar
italian Seasoning
Basil
Parsley
Poultry seasoning on chicken
Nature's Seasoning
Oregano
Grated parmesan cheese - up to 1 Tbsp
Grated romano cheese - up to 1/4 cup
Directions
Dice onions
Put onions and chicken tenderloins into large skillet. Season chicken with Poultry seasoning and Nature's seasoning to taste. Cover with lid to retain steam.
Cook until chicken is cooked through - no pink in the center
Add diced tomatoes, mushrooms, spinach, and tomato sauce
Add oregano, italian seasoning, parsley flakes, basil and brown sugar
Cook another 10 minutes on medium to low heat so that chicken becomes fall apart tender and soaks up the flavor of the tomatoes
Serve over anything you like: pasta, veggies, rice, etc
