Ingredients

1 cup rolled oats
1 tsp dried tarragon
dash of ground black pepper
2 tbsp sesame seeds
500 g chicken breast fllets, cut into thick wedges
250 ml buttermilk
2 tbsp olive oil
lemon wedges to garnish
Directions
1. Preheat oven to 200*C. In food processor, blend rolled oats until finely ground. Combine with dried tarragon, pepper and esame seeds and put into flat plate.
2. Dip chicken pieces in buttermilk, then roll in oat mixture and put aside. In non-stick frying pan, heat oil and brown each chicken pice on both sides.
3. Transfer to baking tray lined with oven-bake paper. Bake for 15 - 20 minutes, until chicken is cooked through. To serve, garnish with lemon wedges and accompany with steamed green vegetables or mixed leaf salad.
