Ingredients

    1 cup flour
    1 cup sugar
    1/2 cup cocoa powder
    1 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt
    1/2 cup low-fat buttermilk
    1/3 cup olive oil
    1 large egg
    1 large egg white
    1 tsp vanilla extract
    1 ounce semisweet chocolate, melted and cooled

Directions

1. Pre-heat oven to 350. Spray 12 cup muffin pan with nonstick spray

2. To make cupcakes, whisk together cake flour, granulated sugar, cocoa, baking powder, baking soda, and salt in medium bowl. Whisk together buttermilk, oil, egg, egg white, and vanilla in large bowl. Whisk in melted chocolate. Add flour mixture, stirring just until blended.

3. Fill each muffin cup two thirds full with batter. Bake until toothpick inserted into center comes out clean (About 25 minutes). Let cool for 10-15 minutes.
