Ingredients

    2 boneless skinless chicken breasts (diced)
    1 tbsp olive oil
    1 green pepper (diced)
    1 red pepper (diced)
    1 onion (purple are best!) (diced)
    1 cup diced tomatoes
    1/2 cup low fat mozzarella cheese
    6 whole wheat tortillas
    Top with fat-free sour cream and extra cheese if desired

Directions

In saucepan, cook chicken with olive oil and desired seasonings (cayenne, thyme, oregano, garlic, etc).
Once chicken has no pink, add in peppers and onion.
Saute' for approx 5-6 min and then add in the tomatoes and cheese.
Line a large casserole dish place with tin foil. P
ut some of the chicken mixture into each tortilla and roll up.
Place side by side in casserole dish.
Bake at 350 for approx 20 minutes, with a layer of tinfoil covering the top (the last 5 should be uncovered though).
Serve with sour cream.

    Excellent. I did 1/2 of the recipe w. cheese and 1/2 w.o. I was prepared to add cheese later if it didn't turn out well without my deletion. But, honestly, I liked this recipe best without cheese. The tortillas were enough to add interest! The peppers/onions piled high made the chicken incredible. - 4/25/10

    I like them, but they leaked while baking and all stuck to the foil (I line my baking pans with foil) and were very hard to remove without tearing the tortilla apart - would use a non-stick spray next time. My husband didn't care for them though. - 10/28/08

    Made this today. I added cilantro to the vegetables and a little jalepeno to the chicken. It was great! I'll definitely make this again. I have to work to get fresh vegetables into the hubby - the peppers and onions snuck right by him! - 8/5/08

  • Although I didn't follow the recipe exactly because I wanted to use what I had on hand, I think it was close enough to say that I would make it again. To me, practically anything tastes great in a tortilla! - 5/8/15

  • This was a very easy recipe and very tastey!! I reccomend this to everyone! Plus my husband loved it! We both agreed it tast like chicken fajitas. Only variation I did was I aded a small amount of cooking sherry to the chicken before I added the peppers and onions. - 2/1/11
