Ingredients

    1 cup greek-style yogurt (I used 0% fat)
    1 cup 1/4-inch cubes cucumber
    3 T chopped fresh dill (I used 1T. dried)
    2 T chopped shallots
    olive oil for drizzling
    1 lb uncooked large shrimp, peeled and deveined
    8 c. baby spinach leaves
    3/4 c. feta cheese

Directions

Serves four.
Mix the yogurt, cucumber, dill, 2 T. lemon juice, and shallots in a small bowl. Season generously with salt and pepper. Chill. Shrimp may be grilled (on a skewer) or sauteed with a little olive oil until just opaque in center, about three minutes per side (maybe less if sauteing). Divide spinach among four plates and drizzle with lemon juice and olive oil to taste. Top each with 1/4 of the shrimp. Spoon tzatziki over the shrimp; sprinkle with feta cheese and serve.
