Introduction

Number of Servings: 9

Ingredients

    2 C uncooked, dry split peas
    1½ C grated carrots
    1 C chopped (or grated) onion
    3 stalks chopped celery
    2 tsp crushed bay leaves
    1 - 2 Tbspl curry powder (or more to taste)
    Water to cover, about 6 cups
    Fresh ground pepper if desired (grind over soup when serving)

    Chicken or vegetable broth may be used in place of water with few added calories but remember to take into consideration the fat and sodium.

Directions

A thick soup will yield 9 1 Cup servings.

Combine all ingredients except pepper and cook as follows:
Stove top: Soak peas overnight, drain and add other ingredients. Bring to a boil then simmer for 1 or more hours to desired consistency.

Crock Pot: Low 10-12 hours
Crock Pot: High 5 - 6 hours
