    1 head of lettuce chopped
    1-2 cups of romaine(green leaf) lettuce
    1 can kidney beans (rinsed)
    2 shallots (green part) chopped
    1 can pinto beans (rinsed) (texas ranch beans will work too, but rinse them)
    2 cups of cubed cheddar cheese (small cubes)
    1 cup of mozzarella cheese cubed
    5 hardboiled eggs (use the white part only - chopped)
    6 tbs of FF catalina dressing
    2.25 oz of Fritos


Hard boil the eggs and discard the yellow.
Get a large serving bowl
In the bowl place the first 8 ingredients and mix well. Right before serving mix in the dressing and fritos. You can add cubed ham or turkey to make it a main meal. (but it will add to the calories/fat etc). We love this at our house! Add more or less dressing to taste. Serve with a grilled chicken breast for a meal!
