Introduction
I was looking for a good, quick lentil recipe to use as a side dish and came up with this one. I typically don't measure my ingredients so I estimated the measurements. I used what veggies I had on hand, but feel free to vary based on your tastes. I will also try adding some fresh herbs next time to pump up the flavor. Ingredients

1 cup dried lentils
1 can 99% fat free chicken broth (14 oz)
1/4 cup water
2 Tbsp extra virgin olive oil
1 carrot, peeled and diced
1 rib of celery, diced
1/2 cup diced onion
1/4 cup diced bell pepper
3 cloves garlic, minced
4 oz chopped fresh mushrooms
1/4 tsp black pepper
Directions
Place lentils, chicken broth and water in a pan and bring to a boil. Cover and simmer for approximately 20 minutes.
While lentils are cooking, dice veggies. Heat a large skillet over medium high heat. Add olive oil. Add veggies and garlic and saute until onions are soft and veggies are tender (but not mushy). Stir in mushrooms and remove from heat.
Combine cooked lentils and sauteed veggies. Season with black pepper to taste.
