This recipe makes 3 loaves and 20 medium slices per loaf. This recipe makes 3 loaves and 20 medium slices per loaf.

    7 1/2 cups Dark Rye Flour
    7 1/2 cups Whole Wheat Flour
    4 tbsp vinegar plus a dash
    3 tsp salt
    1 pkg of quick yeast
    7 1/2 cups luke warm water


Mix everything together and stir for a long time.

Grease bread pans with cooking spray or oil. Place dough in pans and fill 1/2 full. Turn oven to 300 deg F. Place filled bread pans ontop of stove, cover with cold damp tea towel. Let rise for 1 hour. Turn oven to 350 deg F. Cook for 1 to 1 and a half hours depending on oven. At one hour mark cover with tin foil for bread doesn't brown any more.

Make 3 loaves.
