Ingredients

    1 lb whole wheat spaghetti broken into 2 inch lengths
    100 grams salami-finely chopped
    6 oz chopped marinated artichoke hearts and liquid
    2 to 3 zucchini diced
    2 cups diced carrots
    1 very thinly sliced onion
    2 cups grated low fat mozzarella
    1/4 cup parmesan
    1/4 cup olive oil
    1/3 cup white wine vinegar
    fresh basil, rosemary, parsley, oregano to taste (can use dried if necessary)

Directions

Cook whole wheat spaghetti til tender. Toss in diced carrots just before removing from heat. Drain, then add onion while still hot. Add chopped marinated artichokes and liquid. Add zucchini and toss. Mix vinegar, olive oil, parmesan and finely chopped herbs. Pour onto salad and mix. Add mozzarella and finely chopped salami and mix again.
