Ingredients

    1 large onion
    2 Tbsp extra virgin olive oil
    1 cup lentils
    1 cup rice
    3 1/2 cups water
    1/4 tsp kosher salt
    1/4 tsp Aleppo pepper flakes (black or red pepper can substitute)

Directions

Peel and chop onion. Heat oil in a heavy-bottomed saucepan with a tight-fitting lid. Add the onion and cook over medium to medium-high heat, stirring frequently, until browned on the edges (about 10 minutes).
Meanwhile, pick over and rinse the lentils. Add lentils, water, and seasonings to the onions, stir well. Cover, bring to a boil, then lower heat and simmer 15 minutes.
Wash rice and let soak while lentils are cooking. Drain well and add rice to lentil mixture, stir, cover and simmer until tender and water is absorbed (about 15-20 minutes).
Stir before serving. Makes 6 side-dish servings or 4 main dish servings.
