Introduction

Number of Servings: 24

Ingredients

    1.5 cup Whole Wheat Flour
    .75 cup Whole Ground Flaxseed Meal (Bob's Red Mill)
    .75 cup 10 Grain Hot Cereal (Bob's Red Mill)
    .5 cup Brown Sugar
    2 tsp Baking Soda
    1 tsp Baking Powder
    .5 tsp Salt
    2 tsp Cinnamon
    1.5 cup Grated Carrots
    2 Apples (medium size), shredded
    1 Banana (medium size), smashed
    .5 cup Almonds, chopped
    .75 cup Milk, non-fat
    2 Eggs, beaten
    1 tsp Vanilla Extract

Directions

1. Preheat oven to 350 degrees. Grease and flour 24 ct. muffin tins.
2. Mix together dry ingredients in large bowl
3. Stir in carrots, apples, banana, and nuts
4. Combine milk, beaten eggs, and vanilla. Stir into other ingredients until just moistened. Don't over mix!
5. Fill muffin cups 3/4 full and bake 15-20 minutes

Makes 24 muffins

    They are in the oven as we speak. The batch mixed up easily and I added some extra raisins. They didn't raise as high as I would have like. - 8/12/07
