Number of Servings: 3

Ingredients

    3 boneless skinless chicken breast
    1/4 cup Special K (plain)
    1/4 cup italian style bread crumbs
    1/4 cup grated parmesan cheese
    1 large egg(or 1/4 cup of egg substitute)
    1/4 cup Rice Dream Soy Milk
    Cooking Spray
    Plastic Zip-lock Bag

Directions

Preheat oven to 375
Place all dry ingredients into the plastic bag and crush the cereal finely. In a small dish beat egg and soy milk until thoroughly mixed. Take each breast and finely coat it with the cereal mixture then coat it with the egg mixture and then coat it a second time with the cereal mixture. This works best one at a time. Place coated breasts onto a greased baking pan and bake at 375 for 20 mins. Flip and baked on the other side for an additional 20. Serve with greens and black keyed peas for a well balanced meal. Serves 3
