My adaptation to a recipe for low carb crepes, just using fat free ingredients, Perfect for your pancake fix when you want to watch your carbohydrates and sugars. Number of Servings: 1

Ingredients

    0.25 cup Sorrento Fat free ricotta
    0.5 cup egg beaters
    2 packets of Truvia
    1 tsp ground cinnamon

Directions

Whisk all ingredients together. Heat a nonstick pan over medium low heat, and spray with nonstick spray. Pour 2 tablespooons of batter into hot pan, and immediately swirl around to make a thin layer. Cook for 1-2 minutes until set. Flip over and cook on other side 1 minute. After each crepe, spray your pan, to help with the ease of flipping.

Makes 6 6 inch crepes.
