Introduction
A recipe I developed when I had bought too many limes, now when making chicken salad I always buy limes to go in it. A recipe I developed when I had bought too many limes, now when making chicken salad I always buy limes to go in it.Number of Servings: 6
Ingredients

4 cooked boneless skinless chicken breast or buy a cooked chicken at the deli
4 stalks celery diced
3 tablespoons sweet pickle relish
2 limes
1 granny smith apple or you can use grapes
8 tablespoon light mayo
salt and pepper to taste
Directions
In a large bowl shred chicken. Add diced celery, sweet pickle relish, and diced granny smith apple(or halved grapes). Zest the limes in the bowl, and then add the juice from the lime over the apples. Add mayo and salt and pepper to salad. Stir to combine. Personally with the flavor of the limes I don't miss the salt and pepper. Serve over a bed of lettuce, or stuffed into tomatoes or as sandwiches.
