Ingredients

    2 tablespoons olive oil
    2 cups chopped onion (approx. 2 med)
    3 garlic cloves, minced
    1 lb chicken breast, cut into 1 inch cubes (or you can use one pound of ground chicken breast meat)
    1 12 oz box whole wheat pasta (approx 7 cups cooked)
    1 28 oz bag frozen spinach (approx 3 cups cooked)
    1 cup chicken broth
    1/2 cup cooking white wine
    1tablespoons corn starch

Directions

Start large pot of water boiling for your pasta and spinach.

Saute chopped onion and minced garlic in one tablespoon of olive oil. When golden in color (approx. 10 minutes), take out of pan and set aside. Take the other tablespoon of olive oil, put in pan and brown chicken and cook through, about 10-15 minutes.

While chicken is cooking, cook pasta according to directions, adding frozen spinach about halfway through the pasta's cooking time. Drain.

Put cornstarch in a bowl, add about 1/4 of the chicken broth to the cornstarch and mix well. Add the rest of the chicken broth and the 1/2 cup white wine to the cornstarch mixture; stir well and add to the chicken. Add onion and garlic and cook through until slightly thickened. Add to cooked pasta and spinach and gently stir. Enjoy!!!
