Ingredients

    16 oz. Orzo pasta
    4 Boneless, Skinless Chicken Breasts, cut into strips
    1 Red Onion, sliced
    2 Red or Yellow Bell Peppers, chopped
    1-2 tsp. olive oil
    4 medium tomatoes, chopped
    1 Jalapeno Pepper, minced
    1 bunch of green onions, chopped
    3/4 cup lime juice
    1/2 tsp. salt
    Dollop of sour cream on each serving, optional

Directions

Cook pasta according to directions on package, set aside.
Heat oil in a large skillet on medium-high. Add chicken, stirring to prevent browning. Add peppers and onions; continue to cook for about 5 minutes until chicken is cooked through.
In a separate bowl, combine the tomato and the rest of the ingredients, except for the sour cream. Stir to combine.
Combine pasta, chicken mixture and tomato mixture in a bowl. Toss well. Serve with a dollop of sour cream on top of each serving.

Optional: more vegetables and some cayenne may be added to taste.

Serving size: 1 cup of pasta mixture and a dollop of sour cream.

Makes 8 servings.
