Ingredients

    * 6 c water
    * 1 ham hock, cracked (about 1/2 lb)
    * 4 pounds collard greens
    * 3 TBSP whipped butter
    * 1/2 tsp Tabasco
    * Salt, to taste

Directions

Makes 4 to 5 servings


1. Put water and ham hock in a pot and bring to a boil. Reduce heat, cover and simmer for 40 minutes.


2. Meanwhile, trim tough ends of collards and the ribs of the larger leaves; chop. Add to water and ham hock and cook, covered, over a low heat for 1 1/2 hours, adding water if needed.


3. Before serving, add butter, salt and Tabasco. Serve with pot liquor (liquid in pot).
