Crust
olive or cannola oil spray
2 cuos kellogg's special K protein plus
2 oz Musselman"s lite applesauce
Filling
6 pints blueberries, washed and picked over
1 cup granular splenda
3 tablespoons corn starch
1/2 -1 tsp cinnamon to taste
Directions
preheat oven to 375.
Spray deep dish pie plate with olive or cannola oil .Crush cereal in food processor, add applesauce and process
another minute. Press all but 1 tablespoon of the crumb mixture into bottom of pie plate.
Mix splenda, corn starch and cinnamon in a large bowl, then add blueberries and mix to coat the berries. Add to crust and bake for 90 minutes or until bubbling.
Remove from oven, mix the filling with a spoon and sprinkle the remaining cereal crumbs on top.Cool and serve. Makes 12 large servings at 146 caloreis each.
