Ingredients

    1 can chickpeas
    1c mint, loosely packed and chopped
    2T lemon juice
    grated lemon rind - 1 lemon
    1/4 c olive oil
    1 clove garlic, minced
    2oz manchego cheese, chopped
    Salt and pepper to taste
    2c arugula

Directions

mix all ingredients except arugula in a bowl, toss to coat. Let sit for 15-30 minutes or cover and sit overnight.
Place arugula in a bowl and spoon chickpea mixture over top.
