Introduction

Ingredients

    1 pound fresh or frozen broccoli
    1 tablespoon margarine
    2 tablespoons flour
    1/2 teaspoon salt
    dash pepper
    1 cup nonfat milk
    1 cup shredded 2% cheddar cheese

Tips

Substitute any vegetable/cheese combination you like.


Directions

Breifly cook the fresh or frozen broccoli. While the broccoli is cooking, melt the margarine in a 2-quart saucepan. Stir in the flour, salt and pepper. Let it bubble a little bit to sort of toast the flour. Whisk in the milk (may need a little more). Cook and stir the sauce over medium heat until it boils. Allow it to boil for a whole minute. Add the cheese and stir until it melts. Add the drained cooked broccoli. Stir it up and heat through.
