Ingredients

    Crust:
    1/4 cup Butter, unsalted
    1/4 cup unsweetened applesauce
    1.5 Tbsp honey
    5 Tbsp flax seed meal
    1/3 cup whole wheat flour plus 2 Tbsp.
    1/3 cup whey protein powder (1 oz)

    Filling:
    2 large eggs
    1/4 cup honey
    3 Tbsp lemon juice
    1/3 cup whey protien powder (1 oz)
    1/4 tsp baking powder

    3 Tbsp powdered sugar for dusting on top - OPTIONAL

Directions

Soften up the butter by leaving it on the counter for an hour or so, or do it in the microwave. Add the applesauce and the honey and stir well. Add the flour, flax meal and protein powder. Mix very well to make a dough similar to sticky pie crust. Turn the dough into a 8 x 8-inch greased pan. Use wet hands or the back of a wet spatula to pat and press the dough into an even layer on the bottom of the pan. This is the crust. Bake at 325° for about 15-20 minutes. Do not overbake.

Now prepare the lemon layer. In the same bowl combine the eggs, 1/4 cup honey, protein powder, baking powder and lemon juice. Blend with a whisk until smooth and thick. Carefully pour this over the baked crust. Shake the pan gently to level it all out. Bake at 325° for another 15-20 minutes. Remove the pan from the oven and allow to cool before dusting the tops with powdered sugar and cutting into bars.
