Introduction

These cookies are similar to the store bought digestives, they are mildly sweet, hearty, and have a great, crumbly texture. Once cooled you can dip one side in melted chocolate to make chocolate digestives, although they are also delicious without it. They are lovely accompanied by a cup of tea. Ingredients

    4 oz. whole wheat flour
    4 oz. oatmeal
    4 oz. butter (1 stick)
    2 oz. brown sugar
    1 tsp. baking powder
    1-2 T. milk

Directions

Place all ingredients except milk in food processor and process until you get an even, crumbly texture. then with processor running add 1-2 tablespoons of milk, just enough to hold the dough together. Wrap in plastic film and chill for 15 min. Roll out dough and cut out cookies using a round cookie cutter. bake on a parchment paper lined baking sheet for 12 minutes at 350F. Let cool 5 minutes before transfering to a wire rack to cool completely.
