Number of Servings: 5

Ingredients

    .5 lb extra lean ground beef (93% lean or higher)
    .25 tsp salt
    1 tsp chili powder
    3 cloves garlic, minced
    5 cups zucchini, cut into 1/2 inch dice
    1/2 tsp italian seasoning
    1 can (14.5 oz) diced tomatoes
    1 sm can (5 oz) tomato juice
    1 cup shredded reduced fat cheddar cheese, divided
    2.5 cups cooked brown rice - hot

Directions

Brown ground beef in skillet, seasoning with salt and chili powder. Drain fat and set aside.

Add garlic and zucchini and italian seasoning to skillet and saute for 1 or 2 minutes, until the zucchini is crisp-tender.

Return the seasoned ground beef to the skillet with the zucchini and add 1 can of diced tomatoes and tomato juice. Heat through -- approximately 2-3 minutes, but don't overcook the zucchini. Stir in 2/3 cup of cheese just before serving.

Serve over 1/2 cup hot rice and sprinkle the remaining cheese equally over each serving.
