Introduction

This is a very simple and great way to use up all the extra zucchini that you might be growing this summer. Just be sure to grate the zucchini before adding. Can also be baked in 2 loaf pans. Ingredients

    4 eggs
    3/4 vegetable oil or canola oil
    3 cups flour
    1/2 cup brown sugar, packed
    1 1/2 tsp baking soda
    3/4 tsp baking powder
    dash of salt
    2 tsp ground cinnamon
    2 cups of grated zucchini
    1 tsp vanilla extract

Directions

Preheat oven to 350 degrees
1. Beat eggs.
2 Gradually beat in sugar, then oil.
3. Combine dry ingredients and add to sugar mixture alternatively with zucchini.
4 Stir in vanilla.
5. Turn into greased and floured 9" tube pan.
6. Bake at 350 degrees for 50 minutes.
7. Let stand for 10 minutes
8. Turn out and cool.
