Ingredients

    8 Large Eggs, 1/4 Water, 1/4 tsp Salt, 1/4 tsp Pepper, 4 tsp unsalted butter, 4 Oz Grated Cheddar Cheese (1cup), 3/4 Cup Chopped Bell Pepper, 1/2 Cup Chopped Yellow Onion,3/4 Cup Diced Ham or Bacon

Directions

Heat 1 tblsp olive oil in a large skillet over med high heat. Add 3/4 Cup Chopped Green (Red) Bell Pepper and 1/2 chopped yellow onion; cook until all ingredients turn light golden, about 3 minutes. Use 1/4 of this filling for each omelet, preparing recipe according to instructions.2)Whisk eggs, water,salt, pepper in a med bowl. 3) Melt 1 tsp of the butter in a 8 inch nonstick skillet over med high heat. Add scant 1/2 cup of the egg mixture and cook 1 min until slightly set. Lift edges of omelet and tilt back and forth to allow egg flow underneath. Cook about 2 min until set. 4) Sprinkle a quarter of the cheese over half of the omelet. Fold in half and close omelet and left cheese melt. Transfer to serving plate. If you want sprinkle cheese over top of omelet and then ENJOY!!!
