Ingredients

    About 1 lbs of bay scallops
    1/2 Cup chopped Onion
    1 garlic clove
    3 cups fresh spinach
    Baby Carrots Chopped 1/4 Cup (about 3)
    2 tbsp Philadelphia Light Cream Cheese
    1 Lemon
    1/4 Cup Bread Crumbs (I use whole wheat)

Directions

Preheat Broiler.

Sautee garlic, onion and carrots until softened; add spinach until wilted, move to bowl. Add cream cheese and 1/2 of the bread crumbs.

Spray glass cooking pan with non-fat cooking spray, such as Pam*, add spinach mixture.
Rinse/pat dry bay scallops salt/pepper to taste. Put on top of spinach mixture. Sprinkle the rest of the bread crumbs over the scallops. Finally squeeze juice of 1/4 lemon over scallops and broil for 10 minutes or until scallops are done.
